I was watching a new show a friend recommended called The Marvelous Mrs. Maisel. In it, Jane Lynch plays a guest role in which she mentions macarons.  I suddenly remembered how much I loved these delicate yet intense (much like myself) treats! So I broke out my French Pastry cookbook and got to work.

It took me a cumulative six hours of research, preparation, baking, waiting, making the buttercream and more to get 3 batches (total of 60+ macarons) completed but I did it!

My first batch (the blue ones) turned out really well.  I filled them with a bittersweet chocolate buttercream.  My second batch (the pink ones) , which were made with a real raspberry buttercream icing that I made, turned out PERFECT – visually as well as developing the “feet” of each macaron and the flavor and texture of each was PERFECT.  My final batch (the yellow ones) I forgot to add the gel food coloring before mixing and I may have, as a result of this, overwhipped the egg and sugar meringue and so they turned out flat but equally chewy and flavorful – I filled these ith my special vanilla buttercream which could put Sprinkles to shame!

Overall it was a fun time with a few challenges but I learned that one must have PATIENCE when making macarons (or any French pastry or dessert) because the technique is EVERYTHING.
